The Experience
Rooms are simple, spotless and pitched at travellers who'd rather spend their money on experiences than thread counts, all king- or single-bed setups with shared baths, free Wi-Fi, and a breezy outdoor balcony that catches the Caribbean Sea in the distance. The real magic happens downstairs, where the bar-restaurant doubles as the neighbourhood hangout: locals drift in for a Carib, med-school students play a round on the pool table, and Lollipop herself works the room, ferrying plates of goat stew and stories about growing up on Saba in equal measure. What to Try
Ask for the day's local special before you even unpack. The goat stew is the sleeper hit, slow-cooked until it falls apart over rice, and the fish cakes are the best cheap lunch on the island. On weekends the kitchen tips its hat to the Dutch side of the Kingdom with a proper kapsalon (fries, meat, cheese, salad, all in one glorious tray), and when the boats come in, the red snapper special is worth building a day around. Round it off with a rum punch on the balcony as the sun drops behind Mt. Scenery.
