What to Try
Order jerk chicken as your baseline - it's the dish that tells you whether a Jamaican kitchen is serious, and Pot Cova's version is smoky, well-marinated, and properly spicy. Curry goat and oxtail with butter beans are the other two must-orders; both are slow-cooked and rich, best paired with rice and peas and a side of fried plantain. Save room for festival (sweet fried dumplings) and wash it all down with a homemade sorrel or ginger drink. The Surinamese-tinged specials rotate, so ask what's coming out of the pot that day.

Come for the mid-morning slot - the kitchen opens at 8 AM Tuesday through Saturday, and this is one of the only spots in Paramaribo where you can get a proper Jamaican breakfast (think ackee-style scrambles, saltfish, fried dumplings) before the lunch crowd arrives. They close between 1:30 and 3 PM every day and take Sunday and Monday off entirely, so plan around that gap. Cash is easiest, and if you're a heat lover, ask for the house scotch bonnet sauce on the side - it doesn't come out unless you request it.
