Set on the wild, breezy Southeast Peninsula, Carambola is the peninsula's most polished dining address without being stuffy. The main pavilion is open-air Spanish-hacienda: terracotta tiles, whitewashed arches, timber beams and hanging lanterns that glow at dusk. You can eat indoors under the fans, out on the wraparound terrace, or with your toes in the sand at loungers along the water. Service is unhurried and genuinely warm, the soundtrack is low-key Caribbean, and the sunset view over the Caribbean side of the peninsula is one of the best on the island. It's a favorite of resort guests and villa renters looking to escape Frigate Bay's noise, and by day it doubles as a proper beach club with rentable chairs, umbrellas and cocktail service straight to your lounger.

The kitchen leans into fresh local seafood ΓÇö think seared local snapper, lobster when in season, and a surprisingly serious sushi program that few first-timers expect on St. Kitts. Start with the tuna tartare or conch fritters, move to grilled mahi or the catch of the day with tropical salsa, and save room for the passionfruit or key lime dessert. The bar takes cocktails seriously (the rum punch and mango daiquiri are standouts), and the Opus wine cellar is one of the deepest lists on the island if you want to splurge on a proper bottle.

Dinner is Wednesday through Monday only (closed Tuesdays), and the drive out along the Southeast Peninsula Road is stunning but pitch-black on the way home, so plan a taxi and confirm the pickup time before you sit down.
