Roti is the engine of budget eating in Suriname. More than twenty of the fifty-odd cheap spots we screened are roti shops — a legacy of the country's Hindustani community — and nearly all of them stand in Paramaribo, from the Indira Gandhiweg corridor southward. The rest of the map is thin but useful: Nieuw Nickerie in the far west, Albina on the eastern border, Meerzorg just across the river.

The real choice is roti versus broodje. A roti shop hands you chicken or duck curry with aloo and long beans folded into a flaky dhalpuri, eaten by hand or spoon; a snack bar like Wolly's sells bread rolls stuffed with bakkeljauw or spicy chicken instead. Either way it is counter service, no reservations, and small money — carry SRD cash, as cards are not a given.

These are lunch businesses. Go midday, when the dhalpuri comes off the tawa fresh and the popular fillings have not sold out; many shops wind down by early evening, and Sunday hours are unpredictable.
