On St. Barth, dressing up for dinner is practically a local sport, and most of the stage is set in Gustavia. On the lagoon or beach side you trade that for the sound of water a few metres from the table. Either way, book ahead: rooms here are small, and from December through April the good tables go days in advance. Dress codes stay French-island relaxed — elegant, never a jacket requirement.
Time it for the golden hour; sunset arrives between roughly 5:30 and 6:45 pm year-round, so an early reservation buys the view. Note that many kitchens close for annual holidays in September and October, the island's quietest stretch.
