Shawarma is one of the things this island quietly does very well. Lebanese, Palestinian, Turkish and Algerian kitchens arrived with the island's trading communities and left a genuine spit-roast culture behind, and it runs on both sides of the border - Simpson Bay and Philipsburg on the Dutch side, Marigot on the French.
What arrives varies more than the single word suggests. The Dutch-side kitchens lean to the full sit-down version: a proper plate, rice, mezze, and in one case a Caribbean seasoning worked into the marinade that you would not meet anywhere in the Levant. Marigot leans fast and late - counters and near-food-truck operations where the wrap is the entire point and the queue forms well after midnight.
Prices here are among the kindest on the island, mostly the $ and $$ bands, and portions run generous at every address below. Two practical notes before you set out: several of these close one day a week and it is never the same day, and the two Marigot spots keep hours that move around. Check before making a special trip rather than turning up hungry.

1. Little J Shawarma SXM — Best for the island's benchmark shawarma
Formerly Little Jerusalem, and still the name people give first when you ask where to eat shawarma here - 549 Google reviews at 4.7 is far and away the strongest record on this list. A family-run kitchen on Airport Road working Palestinian technique together with Caribbean seasoning and local spicing, made fresh through the day rather than held.
Local tip. It runs separate lunch and dinner services with a break between the two, so mid-afternoon is the one time not to turn up.
Worth knowing. Closed Wednesdays, and the kitchen stops at 10:30pm - this is not a late-night option. Small and busy, so expect a wait at peak.
2. Yallah Shawarma & Hookah — Best for shawarma with mezze and a pipe
Cole Bay's Middle Eastern room, and the highest-rated address here at 4.9. Traditional Arabic shawarma in chicken, beef, mixed and falafel, alongside rice platters, kebabs, lamb chops and shish tawook, with proper mezze to go with it - hummus, baba ghanoush, tabouleh, fattoush, labneh - then Arabic tea and hookah to finish.
Local tip. This is the one built for staying rather than collecting: the mezze and the hookah turn it into a whole evening rather than a stop.
Worth knowing. Closed Tuesdays, and at 20 reviews the sample is small however good the score.
3. The Authentic Ouali Food — Best for the late-night wrap
A small Algerian-Turkish-American operation on Rue de Hollande in Marigot, closer to a food truck than a restaurant, turning out shawarma alongside burgers and pizza with house sauces and famously generous portions. The cheapest entry here at $, and rated 4.9.
Local tip. This is the late one. It opens in the evening and at weekends runs into the early hours, long after every Dutch-side kitchen on this list has shut.
Worth knowing. Our opening days and Google's disagree outright about which day it closes, so call before you drive over. It is a counter operation - no table service.
4. Shawarma Star — Best for Philipsburg, and open latest
The Philipsburg entry, on Bush Road, and the only one here actually in town rather than out at Simpson Bay, Cole Bay or Marigot. It rates 4.7 across 32 reviews and keeps the longest daily hours on this list, which makes it the fallback once the better-known kitchens have closed for the night.
Local tip. Open from 11am through to midnight - longer than anything else here manages.

5. Shawarma Spot — Best for a cheap wrap in central Marigot
A plain counter on Rue Simon Jeffry in the middle of Marigot, at the $ end alongside Ouali, rating 4.4 across 41 reviews. It earns its place on consistency rather than ambition - a straightforward wrap, made quickly, in the part of town where you actually want lunch.
Local tip. A short walk from the Marigot waterfront and the market, so it fits neatly into a French-side morning.
Worth knowing. We hold no opening hours for this one at all - not ours, not Google's - so call before a special trip. The least documented entry on this list.
