Suriname's Indo-Surinamese roti scene is legendary, but Maharaja Palace is where you go when you want the *other* half of the story: proper North Indian cooking, dressed in imported palace decor and cooked by chefs flown in from the subcontinent. Push open the door and the volume of the city drops. It's grand without feeling stuffy: families crowd big round tables, couples tuck into corner two-tops, and on weekends the back hall is usually humming with a birthday or a bruiloft. Because the kitchen is 100% halal and staffed by a brigade of seven chefs, orders come out quickly even when the room is packed, and the spicing is dialed to actual Indian heat levels rather than the milder Surinamese palate ΓÇö a rarity in Paramaribo.
What to Try
Start with samosas and let the tamarind chutney do the talking, then commit to a chicken biryani ΓÇö it's the dish the kitchen is proudest of and arrives properly layered, not stir-fried like the shortcuts you'll find elsewhere in town. Channa Punjabi is the sleeper pick for vegetarians (thick, tomato-forward, best mopped up with fresh naan), and the tandoori chicken comes off the grill blistered and smoky.
