Set on a hillside above Oranjestad, this three-bedroom hideaway is built from four repurposed shipping containers and finished with recycled materials, so meals here already come with a story before the first cork is pulled. Guests cook in the container-house's air-conditioned kitchen and carry plates up to the roof deck, where the horizon runs from Saba's cloud-wrapped peak to the volcanic silhouette of St. Kitts and Nevis. Endangered Antillean iguanas patrol the yard, banana trees drink recycled grey water below, and trade winds do the work of air-conditioning once the sun drops. It is quiet in a way beachfront resorts on other islands cannot manage — a rare private table on an island where dining out is a short and mostly casual list.
What to Try
Plan the evening around Statia's daily catch — wahoo, mahi-mahi or snapper from the fishermen who tie up at Lower Town's Gallows Bay — seared simply and eaten on the roof at golden hour. Grill Creole-spiced chicken or goat with a side of johnnycakes and stewed pigeon peas picked up from a local cook shop in Oranjestad. Chase it with a cold Carib or a rum punch made with Statia's ubiquitous Bounty rum, and end with mango or soursop from whichever roadside vendor you passed on the way up.
Insider Tip
Statia has no proper supermarket by mainland standards and shops shut early — do your provisioning right after the morning ferry or the mid-day flight lands, before Duggins or Windward Superette thin out. If you time dinner for about 30 minutes before sunset, you get the sky show over Saba plus the green-flash window on clear evenings; bring a light layer, because the roof deck cools off fast once the trades pick up.

Location: hillside above Oranjestad, Sint Eustatius (Caribbean Netherlands), roughly 10 minutes by car from F. D. Roosevelt Airport and 5 minutes from Lower Town's dive shops. Access is by rental car or 4x4 only — taxis are scarce after dark. Bring reef-safe sunscreen for daytime, a windbreaker for the roof at night, and cash in US dollars (the island's official currency) for market stalls and small vendors that don't take cards. Mosquito coils are useful at dusk. Wi-Fi and rainwater-fed plumbing are on-site; power can flicker in storm season (Aug–Oct), so keep a headlamp handy.
