Why Go
On an island with barely a dozen places to eat out, KingBird sidesteps the whole restaurant idea. It's the home kitchen of chef Rolf and his partner Caro, tucked into the ridge above the White Wall on the Weg Naar Oranjestad, and the only way in is a WhatsApp and a date on the calendar. What arrives is a monthly-changing tasting menu cooked for a table of guests who mostly booked before they got off the ferry.
The Experience
You'll be one of a small handful of diners — sometimes a couple, sometimes a group that has taken over the whole evening — sitting down to a menu Rolf has been thinking about all month. There's no printed carte and no server drifting past with a wine list; Caro walks each course out herself and tells you what's on the plate, what's local, and what Rolf couldn't resist ordering in on the last supply boat. Because Statia's produce is famously unpredictable (the mailboat, the swell, the volcano's mood), the menu is a moving target: European technique built around whatever landed that week, plated with the quiet confidence of people who've been cooking privately for years rather than performing for a dining room. Sunset over the Caribbean does most of the atmospheric work; the rest is candles, conversation, and the fact that you can hear the tree frogs.
What to Try
Whatever's on the current month's menu — that's the honest answer, because it changes on the first of every month and Rolf treats repeat guests to something different each time. Regulars come for his seafood courses (Statia's snapper, wahoo and lobster when it's in season) and for the way he layers Dutch-Caribbean pantry staples — goat, funchi, local peppers — into plates that still feel European in structure. If you're a group, ask about a full multi-course private dinner rather than a shorter set; that's where the kitchen really shows off.

Book on WhatsApp (+599 319 5242) at least a few days ahead — ideally as soon as you know your travel dates — and tell Caro up front about allergies, dietary preferences, and how adventurous you want the menu to be. Because it's a private-dining setup, not a walk-in restaurant, Rolf actually builds the evening around your table, so the more he knows the better it gets. Bring your own wine if you have a bottle you love; on Statia, that's normal.
