Mathieu Rançà slips into your villa on Route de Grand Fond with knives, market bags and a full brigade's worth of composure, then quietly delivers the meal you'd otherwise queue an hour for at Le Toiny.
The Experience
Rançà came up through Institut Paul Bocuse in Lyon and cut his teeth in Michelin-starred kitchens before trading French rain for Caribbean trade winds. That pedigree shows the second he arrives: menus are composed around what looked best at the morning market, the table is dressed with the kind of precision most guests only see in a starred dining room, and by the time coffee lands the kitchen is spotless — dishes done, linens folded, nobody left holding a sponge. Bookings run from intimate two-tops on the terrace to full villa takeovers, weddings on Colombier cliffs, bachelor/bachelorette weekends, corporate charters and holiday-week residencies where he cooks nightly for the same family. The vibe is unmistakably French — plated, seasonal, wine-forward — but he flexes easily into raw-bar aperitifs, grill nights and lighter beach-day lunches when the crew has been on the water since 10am.
What to Try
Ask him to build the menu around whatever came off the Corossol boats that morning — snapper crudo with local lime, langouste flambée, a whole daurade royale on the plancha. His French classical training shines in the sauces (beurre blanc, sauce vierge, a proper jus), and the cheese-and-dessert course tends to be where guests suddenly go quiet. If you're hosting more than eight, request the tasting-menu format with paired wines from his suppliers on-island — it's the closest thing to a private Michelin room in the Caribbean.

Book him before you book the villa if your dates fall in high season (mid-December through New Year, February school holidays, Bucket Regatta week) — Rançà locks up fast and the good chefs on this island are a smaller pool than the villa agencies let on. When you enquire, send him your villa name, guest count, any allergies and a rough sense of the vibe (barefoot lunch vs. jacket-optional dinner) so he can pre-scout the kitchen and pre-order specialty items that don't show up at Marché U. Tip in euros or cash — cards are a hassle here.
