What to Try

The roasted pigeon is the signature — order it if you eat game, no matter what else looks tempting. Otherwise let the seasonal menu guide you: Dufour rotates dishes around what's fresh, so the fish of the day (often line-caught locally) and whatever's built around foie gras or truffle in season are the safest bets. Book at least 24 hours ahead and specifically request a table on the garden edge rather than the interior — the tree canopy and candlelight make the room. Wednesday is technically part of the week but service is Tuesday through Saturday only, so plan accordingly, and don't try to walk in during Gourmet Festival week in November when Dufour hosts visiting Michelin chefs. Come by taxi or have a designated driver: the road back toward Gustavia is dark, winding, and not forgiving after a bottle of Burgundy.
