Skip the safe Margherita and go for one of the house signatures. The **Volcano** — merguez, chorizo and marinated peppers — is the local favorite, a spicy nod to the North African/Caribbean crossover you find all over St Barth's kitchens. The **Chèvre Miel** (goat cheese and honey) is the sweet-savory crowd-pleaser worth splitting as a shared starter. Parking on Route des Salines is scarce after sundown; the small lot behind Le Glacier is your best bet.
