The Experience
Amnios is more guesthouse than resort: two villas, three lagoon-view suites, and a Ti Case room, all dressed in natural materials and arranged around an infinity pool that spills toward the reef. Mornings are for breakfast on the terrace as the sunrise lifts over the lagoon; afternoons drift into a long, unhurried market-driven lunch (served daily except Wednesday, noon–3pm). The real character emerges Thursday through Saturday evenings, when the restaurant reopens as a communal table d'hôte — a single surprise menu, one long table, the chef circulating between courses. It feels less like dining out and less like a hotel restaurant, more like being folded into someone's very good dinner party 15 minutes from Gustavia.
What to Try
Book the €49 table d'hôte (Thu–Sat, 7–10pm) — it changes with the market and the day's line-caught fish from Amnios's local fishermen partners, and drinks are extra so leave room for a bottle from the tightly curated cellar. At lunch, order whatever the catch-of-the-day is; if you're staying, ask the concierge to arrange a Villa Lagon soak in the private jacuzzi before dinner.
Insider Tip
The table d'hôte only runs three nights a week and seats are limited to house guests plus a handful of outside diners — reserve as soon as your St Barth dates are locked, especially in high season. If you want the full sunrise-over-the-lagoon moment, request a View Suite or Villa Lagon rather than Ti Case, and ask about the airport transfer (10 minutes) when you book so you skip the taxi scramble at SBH.
