Black Ginger
Bangkok-trained Thai cooking under a starry Gustavia courtyard
Why Go
Tucked off Rue Samuel Fahlberg, Black Ginger is the rare St Barth restaurant that isn't chasing the French Riviera playbook — it's a candlelit, open-sky Thai hideaway where a Mandarin Oriental-trained brigade turns out some of the most disciplined Asian cooking in the Caribbean.
The Experience
Step off Gustavia's harbor streets and the noise drops away the moment you cross the threshold. The dining room is really an interior courtyard that opens straight up to the night sky, wrapped in a red-and-black palette with glowing dome pendants and Charles Eames chairs — cinematic without feeling try-hard. Service is calm and precise, the soundtrack low, and the pace long enough that a two-hour dinner slips by unnoticed. Founded in 2014 by two long-time St Barth hoteliers and rebuilt after Hurricane Irma, it has settled into that sweet spot where regulars fill the corner tables and yacht crews send guests here when they want a break from foie gras and rosé.
What to Try
Start with the green papaya and mango salad or the soft-shell crab with mango — bright, punchy, and a good calibration of how the kitchen handles heat. The green curry (chicken or shrimp) is the benchmark dish; ask them to bring it forward rather than dial it back. Vegetarian dim sum and the tuna tartare with Thai aromatics are quiet standouts, and you should absolutely end on the mango sticky rice with coconut — it's the version other island restaurants are trying to copy.
Insider Tip
Reserve the courtyard, not the covered seats — the whole point is dining under the stars, and locals know to request a table in the open-air middle. If you're staying in a villa, the To Go operation (separate phone line, lunch and early evening) is one of the best-kept secrets on the island for a proper Thai meal at home; order the curries and sticky rice a day ahead in high season.
The Practical Stuff
Rue Samuel Fahlberg in central Gustavia, an easy walk from the harbor. Dinner only, 6:30pm onward, closed Tuesdays. To Go window runs Mon–Sat 11:30am–2:30pm and 5–8:30pm, Sunday evenings only. Reservations essentially required in season (Dec–Apr) — book several days out for prime slots. Restaurant line +590 590 29 21 03; To Go +590 590 52 92 32. Expect St Barth pricing; bring a card. Smart-casual is the norm — no one's in a jacket, but this isn't a beach cover-up crowd either.
