Amnios St Barth

Barefoot-luxe hideaway on the lagoon's quiet edge

restaurant
boutique hotel honeymoon lagoon views foodie stay design lovers quiet luxury kitesurf & wing-foil small-group escape

Why Go

A five-key boutique perched above Grand Cul-de-Sac's protected turquoise lagoon, where the whole property feels like a friend's very stylish villa — right down to the chef pulling up a chair at dinner.

The Experience

Amnios is what happens when someone reimagines the classic St Barth hotel as something smaller, quieter and more personal. Set into the lower hills of Grand-Cul-de-Sac — the mellow, family-leaning northeast corner of the island — the property is intentionally tiny: two private villas (Lagon and Parc), three View Suites and the compact Ti Case room, all built around an infinity pool that seems to drop straight into the lagoon. The design language is natural and pared-back: raw wood, woven textures, soft neutral linens, everything angled toward the water. Ten minutes from the airport and fifteen from Gustavia, it feels remote without actually being remote. Days here follow the tide — kite-and-wing conditions on the reef-protected bay, a slow breakfast on the terrace, a swim before the sun tips west — and evenings pull inward around a small, chef-driven restaurant where the wine list is loved rather than merely stocked.

What to Try

Book a View Suite for the balcony sightline over the lagoon (worth it over Ti Case if the budget stretches), and time your stay to catch at least one Thursday–Saturday table d'hôte dinner: it's a €49 all-inclusive communal supper where the kitchen team cooks, plates, and talks you through each pour. Order the catch-of-the-day at lunch — it's usually landed that morning — and ask reception to arrange a wing-foil or kite lesson straight off the beach out front.

Insider Tip

The restaurant is open to non-guests but the table d'hôte only runs Thursday, Friday and Saturday and seats are limited to whoever's staying plus a handful of walk-ins — reserve the communal dinner the moment you confirm your room, not on arrival. And skip Wednesday for lunch: the kitchen is closed, so plan a beach picnic or a run to Gustavia instead.

The Practical Stuff

Address: 76 Rte du Grand Cul de Sac, 97133, Saint-Barthélemy. Roughly 10 min by car from Rémy de Haenen Airport, 15 min from Gustavia — a rental car or scooter is basically essential on St Barth. Restaurant hours: breakfast daily; lunch 12–3pm daily except Wednesday; dinner (table d'hôte) Thu–Sat 7–10pm. On-site: infinity pool, small gym, concierge, airport/port transfers. Price tier: high-end boutique (expect peak-season villa rates typical of St Barth; suites are the sweet spot). Best months: Dec–Apr for classic conditions; May–Jun and Nov for softer prices and thinner crowds.
